Placed between a barbeque's gas flames and its cooking grids are parts known as flame tamers. Flame tamers prevent grease from dripping into the flames to prevent flare-ups that will burn your food. Flame tamers also help to distribute the flame and help the barbeque cook evenly.

Flame tamers come in stainless steel and ceramic varieties. The metal is better for heat distribution and the ceramic variety will hold heat better. Heat retention can be a problem with ceramic if you want to lower the heat of your barbeque as it will take a lot longer than cooling steel.
